Blackstone Griddle Grilled Cheese Smashburger
If you have pre-teens or teenagers in the house, this is definitely a recipe for you. It has TWO grilled cheeses and a half pound of ground beef per burger, so it should satisfy even the most robust of appetites. You might even be able to get away with splitting this, if you aren’t a human garbage disposal like my teenage boys tend to be. 😉
Smashburgers thrive on high heat and quick cooking, creating a seared crust that locks in flavor. By using buttery grilled cheese sandwiches as the “buns,” you not only double up the cheese factor but also add a crispy, golden bite that regular buns just can’t match. The secret is making sure everything moves quickly, so prepping your tools and ingredients ahead of time is essential.
Choosing 80/20 ground beef gives just the right balance of fat to keep the burger juicy without making it greasy. Using a burger smasher or heavy spatula ensures the patty gets ultra-thin, allowing it to cook evenly and develop that signature crust. Don’t skip the parchment paper! It helps press the burger cleanly without sticking.
Adding toppings like lettuce, tomato, pickles, and a swipe of mayo gives a fresh, tangy counterpoint to the richness of the grilled cheese and burger. Every bite layers savory, salty, and tangy flavors, making this one of the most satisfying meals you can cook on a Blackstone.

Ingredients
- 8 slices bread
- 8 slices cheese
- 1/2 stick salted butter
- 1 pound 80/20 ground beef
- 1 1/2 teaspoons OWYD SPG: https://Spivacooking.com/i5k4om
- Toppings:
- Lettuce
- Tomato
- Mayo
- Onion
- Pickles
- Ketchup
- Mustard
Instructions
- Preheat your griddle over medium to medium-low heat.
- Assemble all of your ingredients and your cooking tools.
- In addition to the food items, you'll need a large spatula, a melting dome, some parchment paper, a burger smasher (if you have one), and a platter or plate to remove the smashburgers to.
- While the griddle is heating, butter one side of all the different slices of bread and split the ground beef into two equal parts. Gently shape into a ball. Season the balls with the SPG liberally.
- Place the balls of beef onto the hot griddle and smash down with a piece of parchment paper and either a burger smasher or the large spatula. You want it thin!
- While the burgers are cooking, start the grilled cheese on the other side of the griddle. If you need step-by-step on making a grilled cheese, we're in trouble. The difference here is that you'll be smashing them down a bit. If you don't, you won't be able to fit this burger in your mouth.
- Flip the grilled cheese when they are lightly browned on one side. Cover with a dome while they are cooking to help the cheese melt.
- When the burger is browned and crusted on the bottom, flip and let the other side brown.
- Once the burger is done, the grilled cheese should be also. Assemble the burgers by placing one patty on top of a complete grilled cheese, and topping with another grilled cheese.
- Top with your favorite fixings and enjoy while hot!
